Snow in July recipe

This is a variation of a recipe my Aunt Sis, an Irish-American woman who truly had a heart of gold, used to make

 

Butte Pasties (Meat Pies)

 

Preheat oven to 400 degrees.

 

One batch of your favorite pie dough.

 

Filling:

1 lb. sirloin, cut into small chunks

1 onion, diced

1 large carrot, diced

1 large potato, diced

Salt and pepper

One pat of butter per pasty

 

Roll out pie dough. Cut into desired sizes. Heap on filling on one side of pastry square, dot with butter, fold over pastry flap, moisten edges, seal, and slit top. Put on a lightly greased baking sheet. Check after 30 minutes. Lower temperature to 350 if pastry is browning too fast; pour one tsp. of water into the slit if the pies are drying out. Bake approximately one hour or until filling is cooked through and pastry is golden. Serve hot or cold. Makes 6-8.
